Chicken Drumsticks with Red Wine BBQ Sauce

Wine Pairing: Erath Pinot Noir

Chicken Drumpsticks Ingredients: (serves 6)

3 pounds chicken drumsticks
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper

 

Red Wine BBQ Sauce Ingredients:

1 tablespoon olive oil
1 small shallot, diced
2 garlic cloves, minced
1 tablespoon mustard, (Dijon or yellow)
½ cup ketchup
1 teaspoon apple cider vinegar
1 teaspoon Worcestershire sauce
4 tablespoons brown sugar or honey
½ teaspoon smoked paprika
½ teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup Erath Pinot Noir

Instructions

Preheat oven to 400 degrees F.

Lay your chicken drumsticks on a cutting board or plate and pat dry with a paper towel. Combine the spices in a small bowl and rub each piece of chicken with the mixture, covering them completely.

Place the chicken legs on a wire rack on a baking sheet. Bake for 35-45 minutes until crispy and the internal temperature is at least 165 degrees F.

Heat olive oil over medium heat in a small pot.

Add the shallot and garlic and cook for a few minutes until fragrant.

Add the remaining ingredients and stir to mix everything.

Bring the sauce to a simmer, turn down the heat, and let it reduce and thicken for about 15 minutes.

Turn off the heat and pour over the chicken drumsticks to coat.

Serve and enjoy!
